What’s been the one thing keeping you sane during lockdown? For me, I can;t seem to remove myself from the kitchen. I know, madness, right? Most people want to get out of the god damn kitchen, but I’ve found nothing makes me happier than spending time cooking up new creations.
When I call myself a ‘food blogger’, it used to be because I constantly review restaurants around the UK and occasionally baked healthy, dairy alternative treats. But behind-the-scenes, I constantly create exciting homemade dishes, but just never photograph them as I go!
And this time, it’s no different. I taught myself how to make deliciously creamy homemade satay sauce for chicken, but didn’t stop and photograph the process! I did share the step by step on my Instagram stories though, and lots of you asked for the recipe afterwards so they could keep it to hand.
So here you go: this time you have a smiley image of me – your new chef – at the top of this blog post, and a fancy stock image of chicken!
How to make satay sauce
Here’s a list of the step by step how to and the ingredients. The first time I made this I made homemade chicken skewers with peppers, onions and tomatoes and smothers the skewers with the thick creamy sauce. Delicious!
x1 large white onion chopped finely
x1 large garlic clove chopped finely
x1 cup of crunchy peanut butter
1 tbsp Soy Sauce
x1 tbsp Curry Powder
Coconut milk (or alternative if you haven’t got any)
It’s super easy to make, and don’t worry if you haven’t got soy sauce in. The first time I made this I didn’t either so I skipped that step.
- Fry onions and garlic in olive oil until soft
- Meanwhile, mix curry powder, soy sauce and peanut butter into a bowl. If it gets a little stiff, add water.
- Add to the pan of onions and keep stirring, adding in your chosen milk. Just keep adding until consistency is how you like it.
- Shimmer for 5-10 minutes, and voila!
Quick, easy and yummy!
