Lifestyle: Avocado and Spinach Pasta

It’s been a while since I have put together a quick and easy healthy recipe, so today I wanted to show you how to quickly whizz up an Avocado and Spinach Pasta Sauce superfood recipe.  It’s really simple to make- and of course full of goodness! OK so it does include pasta, which we all know is a carbohydrate, but if you use wholemeal pasta or a gluten free version it makes it a little bit better, and we do need carbohydrates for energy.

It doesn’t photograph the best, because lets face it, it is green… bright green food is never going to look appealing. But if you make this the correct way, it is the yummiest, creamiest, healthiest pasta sauce you can create!

x1 whole avocado
x1 cup of spinach
x1 teaspoon of lime or lemon juice
A handful of black pepper & salt
Wholemeal pasta
1/2 cup water


1. Boil the pasta for approximately 15 minutes.
2. Whilst the pasta is cooking, peel an avocado away from the skin and remove the stone. Place into a food processor/blender.
3. Add the washed spinach leaves, lime or lemon juice, salt and pepper, and water.
4. Blend until the mixture is to a thick, creamy, yet smooth consistency. Add more water if needed
5. Once the pasta is cooked, drain and place into a bowl. Spoon the creamy sauce over the pasta to coat, and toss pasta until covered.

You could also add cherry tomatoes if you wanted to give the pasta a little more of a ‘tang’! Avocados are fantastic for providing nutrients, and although can be rather fatty, they are packed with good fats that provide vitamins for your skin, hair and nails. You” find they are rather popular for being a ‘beauty’ vegetable

Whilst I am on the topic of food, I just wanted to share the most simple yet delightful little snack I have been rustling up in-between meals. Again it’s carbohydrates, but I do tend to be slightly addicted to them! I love nothing more than toasted wholemeal muffins (or bread rolls, or whatever you wish to call them depending on your region!) and smothering them with Organic Virgin Coconut Oil Butter…

You have possibly heard about the hype surrounding coconut oil, with all it’s health benefits (and beauty benefits for that matter too). It’s known as a great all-rounder, it’s nutritious, healthy, a key superfood, great for cooking and beneficial as a skin food. You can slather it on your skin for fantastic clarifying and moisturising benefits. I prefer to eat it, and as I am a huge fan of anything coconut tasting in general, I love the taste. I pop it into porridge and smoothies, but more so these days, I just spread it onto toasted muffins instead of butter. I also use it to line baking trays and pans when I set out on a baking/cooking mission!

The coconut oil in particular I am using at present is the Indigo Herbs Organic Virgin Cold Pressed premium quality Coconut Butter, £7.99 for a 500ml jar. It’s like my ultimate beauty food. One of my friends swears that by using this in cooking and baking, the regular consumption helped her hair thicken up. And last but not least, the newest foodie favourite of mine is this amazing Hazelnut Paste from Why Nut.  It is a healthy alternative to nut butters that are made with added sugar and additional ingredients that shouldn’t be used. Made from latest crop of freshly cracked and roasted hazelnuts, this has a liquid texture and contains nno additives, E numbers, or preservatives. I add a drizzle to my porridge or again spread onto breads, but it is also amazing to add to ice cream, chocolate, macarons, flavouring creams, cakes and much more…or simply drizzle on your morning cereal!
